As part of the day dedicated to Erik Satie, Basque chef Inaki Aizpitarte invites you to a white lunch: gastronomic variations inspired by the iconoclastic composer.
I only eat white foods: eggs, sugar, coconuts, chicken cooked in white water; fruit mold, rice, turnips; camphorated blood sausage, pasta, cheese (white), cotton salad, and certain fish (without the skin).
